I start the day with a steaming cappuccino. I call it a cappuccino though I guess it is really a latte with a fair amount of steamed milk on top as well. After drinking my morning caffeinated beverage I drove to work in thinking about the pleasures of coffee. The crisp chill in the air caused my mind to wander towards steamed cider as well. And it was that simple, the apple latte was born. I got into work a fashioned myself another bowl of cappuccino/latte and then began working on my vision of an apple based soup which mirrors the aesthetic of my coffee drink of choice. I began by heating apple cider with wakame seaweed. Once the cider reduced by about a third I added some cream and simmered the mixture to reduce the contents by another third. As the cider soup cooked, I began working on the milk component. I opted to make cheddar milk, which I would then whip and top the soup with. When I strained the milk, I took the cheddar residue and dried it in the oven to make a cheddar cheese powder, which I could then sprinkle on the soup to pique the cheddar milk’s flavor. Finally, I adorned the apple latte with a few celery leaves. At the end of the day I took a few known flavors and was able to present them as a comforting beverage in the form of a soup.
