A dish is not always planned, sometimes the parts just come together. Today that happened. I have been working on a false egg mirroring the aesthetic of the Arzak Egg. Similarly, the cold weather has called for game, particularly duck. Well, I was working on the egg and had some duck ham around and the dish just kind of fell into place. The egg is made of cauliflower-cream cheese and carrot-yogurt, happily assisted in structure by methyl cellulose. We served the egg on crumbled smoked potato chips with scallions marinated in olive oil. The duck ham is simply roasted and sits atop our cranberry-miso accented with epazote leaves. The dish is both tasty and a little playful. When day is full of turmoil it's quite nice to know the food can fall into place.
